Wedding Timeline



Wedding planning can be a stressful, exciting, upsetting, happy an emotional road for any bride. We want to give you our advice on how to make planning your special day exciting, happy, joyful and most of all, relaxing! A wise woman once said, the devil is in the details, so once you have all of your big purchase, out of the way and you’re only three months away from saying “I Do,” what should you do?!

3 MONTHS:
Finalize your menu—make sure to have options for all of your guests to enjoy!
Order favors—this is a way to show your appreciation to your guests in attendance!
Choose readings and readers
Purchase Rings
2 Months Out:
Check-in with all vendors for updates
Start a shot list for your photographer
Review the playlist with band or DJ
Send out invitations (at least 8 weeks before the wedding)






































  
1 Month Out:
Start recording RSVP’s
Get your marriage license
Mail rehearsal dinner invitations
Have your last dress fitting
Start seating arrangements
Purchase bridesmaids gifts

 1 week before: 
Confirm arrival times for vendors
Send a timeline to bridal party
Pick up your dress
Check in with photographer
Break in your shoes!!!
Send finalized guest list to caterer and venue
Pack for HONEYMOON!!

Wedding Trends



Now that mason jars and chevron have officially made and exit out of the wedding scene, we pose the question… what’s next?? After many sleepless nights and days filled with searching over blogs, websites, pinterest and old wedding albums, we’ve come up with some trends to make your wedding stand above the rest! So throw out those mason jars and get ready for days spent crafting and many shopping trips!

The Dress: Say bye bye to hippy garbs and mermaid bottoms. Now it’s time for lace and tulle!

Mercury: Mercury glass is a big trend right now and we expect to see it in many centerpieces for weddings
Metallic accents: Many weddings will be taking on this Great Gatsby theme in the near future, to embrace the trend add hints of gold leaf to your table.

July Featured Dish Recipe


We know you’ll be drooling over Chef’s featured recipe for the month of July. At Dancing Bear Lodge we feel everyone should get to enjoy his wonderful cooking so we’ll give you the inside scoop on his famous recipe!


Chipotle Peach Glazed Chicken with Tasso Polenta Cake, Asparagus, Ham Hock Broth, Yellow Tomatoes and Peach Relish
Polenta
 2 c                               polenta
½                                shallot, minced
6 oz                            Tasso, small diced
2 c                               hock stock
4 c                               chicken stock
2 oz                            crème fraiche
                                    Herbs salt and pepper

Cook tasso and shallot; add stocks and bring to a boil. Season with salt and pepper then add polenta. Whisk so lumps do not form and turn down to a simmer. Cook for 10 minutes, stir in crème fraiche and herbs, check for seasoning then pour into a rectangle nonstick cake pan. Let cool then cut into rounds.


Peach Compote
10                                peaches, peeled, seeded and diced
½                                red onion, diced
½ c                             sugar
½ c                             white balsamic vinegar
4 oz                            honey
1 t                                ground ginger

Cook peaches, onion, sugar, vinegar and ginger for about 15 minutes or until peaches are almost soft. Pull from heat and add honey; put in ice bath.


Chipotle Peach Glaze
10                                peaches, peeled, seeded and diced
1                                  chipotle, diced
½ c                             sugar, cider vinegar
1                                  lemon, juiced
2 oz                            honey

Combine all ingredient and cook until soft, about 20 minutes. Puree and cool.
